How do I cook it so the grains stay separate?
Rinse, soak, then go easy on the water. Rinse in several changes until the water runs close to clear, which takes off the loose surface starch that glues grains together, then soak for twenty to thirty minutes so the grain hydrates evenly and does not have to be boiled into submission. Use less water than you would for other long-grain rice, cook it covered, and then leave it off the heat to stand before you touch it - fluffing straight away breaks the grains while they are still fragile.
Why does the grain length vary between packs?
Harvest and variety. Basmati is an agricultural product, not a manufactured one, so grain length, the proportion of broken grains and how much the rice extends on cooking all shift between seasons and between mills. A pack that looks slightly different from your last one is normal.
What does 'aged' mean on a rice pack?
That the paddy was stored before milling rather than sold straight off the harvest. Aged rice has lost moisture, so it drinks up more water and the grains tend to stay firmer and more separate - which is why it is sought after for pulao and biryani and why it usually costs more. Whether a particular pack is aged, and for how long, is the manufacturer's statement and is on the pack.
How should I store a large sack once it is open?
Decant into sealed airtight containers rather than leaving it in the woven sack it arrived in. That sack is made for transport. Keep the containers cool, dry and out of direct light, use a dry scoop, and keep a small working container out with the bulk sealed away.
How do I keep pantry moths out of it?
Sealed containers, and a couple of days in the freezer when a pack arrives. Pantry moths usually come in with the goods rather than flying into your kitchen, so treating a pack on arrival catches the problem before it spreads along the shelf.
