What should I check on the label before I use it?

How the manufacturer says the product may be used. Mustard oil is sold in different markets under different rules, and bottles imported from some of them carry an external-use-only statement on the label even when they sit on a grocery shelf. That statement is the manufacturer's and it is on the bottle. Read the bottle you receive and follow what it says, rather than assuming it matches one you have bought before.

Why does it smell so sharp straight from the bottle?

That pungency is the characteristic of the oil and it is why it is used. It is also why raw mustard oil tastes nothing like the mustard oil in a finished dish - the aroma is volatile, and what survives cooking is a fraction of what comes off the open bottle.

Why do recipes heat it before anything goes in?

Because cooks want the raw pungency knocked back. The usual instruction is to bring the oil up until it just begins to shimmer and the raw smell changes, then take it off the heat for a moment before the tempering goes in. Done straight from cold the oil dominates whatever it is cooking; taken too far it goes bitter like any oil past its smoke point.

What is it used for?
