How do I know when the oil is too hot?
When it smokes, it is past the point where it tastes good - the oil has started breaking down and it will carry an acrid note into whatever goes in next. Bring it up over a moderate heat and test with a scrap of what you are cooking rather than waiting for a visual cue, because by the time a pan is hazing you have overshot. Oil that has smoked hard is best poured off rather than reused.
Can I reuse frying oil?
Within limits. Let it cool, strain out the crumbs - they are what turns oil dark and bitter - and keep it sealed away from light. Judge it by how it looks and smells rather than by a number of uses: oil that has gone dark, smells sharp or stale, foams at the edges or smokes earlier than it used to is finished. Oil that has fried fish will make the next thing taste of fish.
How do I handle a container this size?
Decant. A 5 or 20 litre drum is awkward to pour accurately and every pour lets air into the whole lot, so fill a smaller squeeze bottle or jug for the bench and keep the drum sealed and somewhere cool and dark. A pump or a tap fitting is worth it on a 20 litre if you are getting through them. Keep it off a sunny windowsill and away from the hob.
What makes oil go off?
Air, light and heat, in that order, and time on top of them. An oil that smells sharp, waxy or like old nuts has oxidised and will taste that way in the food. Buy a size your kitchen gets through, keep it sealed and dark, and go by smell alongside the best-before date on the container.
How do I get rid of used oil?
Not down the sink - it sets in the trap and in the wastewater network. Let it cool, pour it back into a sealable container and put it in the rubbish, or check whether your council or a local collector takes used cooking oil. A commercial kitchen will usually have a collection arrangement already.
