How is a dried leaf like this used?
Crushed between your palms over the pan, usually right at the end of cooking or off the heat. Rubbing it releases the aroma that sitting in the packet keeps locked up, and adding it late keeps that aroma in the dish instead of cooking it away. It is a finishing ingredient rather than something fried at the start.
How much should I use?
Less than you would think from the volume. Dried leaf is bulky and light, so a handful weighs very little but carries a lot of aroma, and it is assertive enough to take over a dish. Start small, crush it in, taste, and add more if you want it - you cannot take it back out.
Mine is mostly stalks. Is that normal?
Some stalk is normal in a dried leaf product, and how much varies between brands and batches. Pick out the coarser pieces as you crush if you would rather not have them in the dish; they are not a fault, just a consequence of how the leaf is dried and packed.
How do I store it so it does not turn to dust?
Airtight, cool, dark and dry, and handled gently. Dried leaf is fragile and every time it is shaken about it breaks down a little further, so a rigid container is better than a bag that gets squashed in the cupboard. Keep it away from the steam of the hob, which is what makes it clump.
