What does 'roasted' mean on the pack?

That the strands have already been dry-roasted at the factory, so you can skip the step of browning them in a pan before you cook. Unroasted vermicelli has to be roasted first or it turns to paste the moment liquid hits it. If a recipe tells you to roast the vermicelli and yours is already roasted, a brief warm-through is enough - taking it further just darkens it.

How do I stop it going mushy?

Less water and less time than feels right. Vermicelli is thin and cooks in a couple of minutes, so it goes from firm to collapsed quickly and keeps softening in its own heat after you take it off. Pull it while the strands still have some resistance, and for a dish like upma add the liquid measured rather than boiling the strands loose in a pot of it.

What is it used for?

Both savoury and sweet. The savoury side is upma and vermicelli pulao, cooked with tempering and vegetables so the strands stay separate. The sweet side is payasam and kheer, where it is simmered in milk and the strands are meant to soften right down. The same pack does both.

Why do the strands break up in the bag?
