Frequently Asked Questions
What is actually in a blend like this?
Whatever the manufacturer has put in it, which is on the ingredient list on the pack. Blends of this kind are not standardised: every brand, and every region, mixes a different set of spices in different proportions. If you are matching a recipe or avoiding a particular ingredient, read the pack rather than assuming it matches a blend you have used before.
When do I add it?
Blends built around ground warm spice are usually added near the end rather than fried at the start, because the aromatics they carry are volatile and long cooking drives them off. A common approach is to stir it in during the last few minutes, or off the heat once the dish is done. Follow whatever the recipe you are cooking says, and the directions on the pack.
Can I use it in place of a different brand's blend?
Usually, but expect the dish to taste different. Because the recipes vary so much between makers, swapping brands changes the balance - some are heavier on one spice, some are much more assertive than others. Start with less than the recipe calls for and add more once you have tasted it.
Why does it smell stronger than my old jar?
Because it is newer. A blend fades from the day it is ground, so a fresh pack next to one that has been open for a year is not the same thing by weight. Adjust by taste rather than by the spoon measure you are used to.
Is the large pack worth it?
Only if you get through it. A big pack standing open for a year is not a saving, because ground spice fades whether or not you use it. Be honest about how much your household actually cooks with in a month, and if you do size up, split it into a small working jar and a sealed reserve rather than opening the whole thing at once.
How should I store it?
In a sealed airtight jar, somewhere cool, dark and dry - a cupboard away from the hob, not the shelf above it. Heat, light and steam are what flatten dry spices. Decant from the bag it arrives in rather than leaving it rolled shut, use a dry spoon every time, and keep the jar closed while you cook rather than open beside a steaming pan.
How long will it keep?
Read the best-before date on the pack - that is the manufacturer's, and the product page shows it as the store entered it. Past that, the question is aroma rather than safety: dry spices do not spoil so much as fade. Open the jar and smell it. If it smells of very little, it will taste of very little, and no amount of extra spooning brings it back.
What is on the pack?
The ingredient list, any allergen statement, the country of origin and the best-before date, all of which are the manufacturer's to state and are printed on the packaging rather than reproduced here. The product page carries the weight, the barcode and the date as the store entered them.
Can I order this with items from other stores?
Yes. DoorToShop is a multi-merchant marketplace, so this can go in the same cart as items from other local stores and you check out once.
How much is delivery, and is there a minimum order?
Delivery is calculated at checkout, where the exact amount is confirmed. Free delivery applies above the threshold shown there, in the Auckland region only. There is no minimum order value, and you can combine items from other local stores in the same cart.
