How are these soaked?
Rinse first, in a sieve, until the water runs clear - that washes off loose surface starch, which is what makes a finished dish gluey. Then soak with just enough water to sit level with the pearls rather than swimming in it, and leave them. Timing depends on the size of the pearl and the brand, so go by feel: a soaked pearl should squash between finger and thumb with no hard core left in the middle.
Mine turned into a sticky mass. What happened?
Almost always too much water, not enough rinsing, or both. Pearls left sitting in excess water keep absorbing until they collapse, and unrinsed surface starch glues them together as they cook. Rinse until clear, soak level rather than submerged, then drain and let them stand so they stay separate.
What is it used for?
