Does it handle like wheat flour?
No, and that is the main thing to know before you start. A millet dough does not build the elastic structure a wheat dough does, so it has little holding it together and will crack at the edges as you roll it. The usual approaches are to work the dough with hot water, to pat it out by hand on a damp cloth or sheet rather than rolling it, or to cut it with some wheat flour and accept a mixed flatbread.
I am avoiding gluten. Can I go by that?
Go by the pack, not by the grain. Nothing here is a gluten-free statement about this product: whether a flour is suitable is a matter of how it was milled, handled and packed, mills often run more than one grain, and only the manufacturer can tell you what applies to the pack you receive. If it matters medically, read the label and take it up with the manufacturer or your health professional rather than relying on a blog page.
What is it used for?
Flatbreads such as roti and the South Indian mudde and ambali style of preparation, dosa and porridge batters, and as part of a flour mix in baking. It is a staple grain flour across much of southern India and it turns up in both everyday and infant cooking there.
Why does it taste different from wheat?
Different grain. Millet flours have a distinctly earthy, slightly mineral flavour that does not disappear into a dish the way refined wheat does, and a darker colour that carries through into whatever you make. If you are new to it, cutting it with wheat flour to start is an easier introduction than going straight to a hundred percent millet flatbread.
How long does it keep?
Less well than refined wheat flour, so buy a size you will finish and go by smell as well as the best-before date on the pack. Whole-grain flours of any kind taste flat or sharp when they have been open too long. Sealed airtight, cool, dark and dry, and the freezer is a reasonable place for the part you are not using.
How do I keep pantry moths out of it?
