What is the difference between thick and thin poha?
How far the rice was flattened, and it decides what the flakes can be used for. Thick flakes hold their shape when wetted and cooked, which is what a stovetop poha dish needs. Thin flakes collapse almost on contact with water, so they are used dry - fried for chivda and namkeen, or stirred into something wet at the very last moment. Swapping one for the other is the usual reason a dish turns to mush.
How do I wet thick poha without turning it to paste?
Rinse rather than soak. Put the flakes in a sieve, run water through briefly, shake off the excess and leave them to stand for a few minutes - they keep softening on their own with the water already clinging to them. Poha sitting in a bowl of water for even a minute too long is past saving, and no amount of careful cooking afterwards brings the texture back.
Can I use thin poha for a poha dish?
Not really, and it is worth buying the right one rather than working around it. Thin flakes have nothing left to hold them together once wet. If thin is all you have, skip the rinse entirely and add them dry at the end, accepting that the result is a different dish.
How should I store it?
Sealed airtight, cool and dry. Poha is light and dry and picks up moisture and smells from the cupboard readily, going soft and stale-tasting; it also gets crushed in a bag, so a rigid container keeps the flakes intact.
