Why buy it whole rather than ground?
Aroma. The volatile oils that carry the smell sit inside the intact seed or pod, and they start leaving the moment the spice is broken open - which is why a jar of pre-ground spice smells faint next to whole seed you crush under a knife. Whole also gives you two things ground cannot: you can toast it, and you can leave it in the pan whole and fish it out, which is how most tempered and slow-cooked dishes use it.
How do I toast and grind it?
Dry pan, no oil, medium heat, keep it moving. You are waiting for the smell to change and the colour to deepen a shade, which usually takes under a minute or two - past that it turns bitter and there is no recovering it. Tip it straight out onto a cold plate so it stops cooking, let it cool completely, then grind. Grinding while warm gums up the mill.
Should I grind the whole pack at once?
No. Grind what you need for the next week or two and leave the rest whole. Whole spice holds its aroma for many months in a sealed jar; the same spice ground loses it in a fraction of that time, which is the whole reason for buying the whole form.
How should I store it?
In a sealed airtight jar, somewhere cool, dark and dry - a cupboard away from the hob, not the shelf above it. Heat, light and steam are what flatten dry spices. Decant from the bag it arrives in rather than leaving it rolled shut, use a dry spoon every time, and keep the jar closed while you cook rather than open beside a steaming pan.
How long will it keep?
Read the best-before date on the pack - that is the manufacturer's, and the product page shows it as the store entered it. Past that, the question is aroma rather than safety: dry spices do not spoil so much as fade. Open the jar and smell it. If it smells of very little, it will taste of very little, and no amount of extra spooning brings it back.
How do I keep pantry moths out of it?
