Is besan the same as chickpea flour?
Close but not always identical. Besan is normally milled from split brown chickpeas (chana dal), while flour sold as chickpea or garbanzo flour is often milled from the larger white chickpea. They behave differently in a batter - the besan is finer and absorbs more water - so a recipe written for one can need adjusting for the other. What is in this pack is on the ingredient list.
Why does my batter go lumpy?
Because besan absorbs water fast and unevenly, so a dry pocket sets before the water reaches it. Add the liquid a little at a time to a paste first and beat it smooth before you thin it out, rather than tipping water onto a bowl of flour. Sieving first helps, and a rested batter is smoother than a freshly mixed one.
Why is my batter thicker than it was yesterday?
It keeps absorbing while it stands. A besan batter left to rest will be noticeably stiffer after half an hour, so it is normal to slacken it with a splash of water just before you use it. Judge the consistency at the moment of cooking rather than when you mixed it.
How should I store it?
Sealed airtight, cool, dark and dry, handled with a dry spoon. Besan is a ground pulse flour rather than a cereal one and it does not keep as long as plain flour - it takes on a sharp, stale smell when it has been open too long. Smell it before you commit it to a batch of batter.
How do I keep pantry moths out of it?
