What is the difference between coarse and fine?

The grind, and it decides the texture of the finished dish rather than being a matter of preference. Coarse rava keeps a granular bite and stays distinct, which is what upma and rava dosa are built on. Fine sooji dissolves into a smooth, soft set - halwa, sheera, idli batters and baking. Using the wrong one does not ruin a dish so much as turn it into a different one.

Why do recipes roast it first?

For flavour and for texture. Dry-roasting in a pan until the colour just turns and the smell changes stops the grains clumping when liquid hits them, and gives the nutty note that an unroasted batch does not have. Keep it moving, take it off before it colours properly, and cool it before storing - roasted sooji sealed while warm sweats and clumps.

Is it the same as the semolina sold in supermarkets?

Usually a similar product at a different grind. Both are milled from wheat, but the grades and the naming differ between markets, so semolina sold for pasta or for dusting a pizza peel is not necessarily the grade a rava recipe expects. Match the grind to what the recipe asks for rather than going by the name on the bag.

How should I store it?

Sealed airtight, cool, dark and dry, with a dry spoon. It picks up moisture and clumps, and like any wheat product it is worth a couple of days in the freezer on arrival and then a sealed container, because weevils travel in with the goods.

How long will it keep?
