When does ground spice go into the dish?
Later than whole spice, and usually off the heat or with liquid close behind. Ground spice has no husk to protect it, so it catches in hot oil in seconds and burns bitter. The common approach is to pull the pan off the heat, stir the powder into the hot oil or onions for a few seconds so it blooms, then get the tomatoes, water or stock in straight away.
Why does it lose its smell so quickly?
Grinding multiplies the surface area, and the aromatic oils evaporate from all of it at once. That is simply what ground spice does - it is the trade-off you accept for convenience. Buy a size you will finish, keep it sealed, and judge it by smell rather than by the date.
Why is the colour different from the last pack?
Agricultural variation. Harvest, growing season, variety and how long the batch has been in the warehouse all shift the shade, and a deeper or paler powder than last time is normal rather than a fault. Chilli in particular ranges widely in colour between varieties and batches.
How do I stop it clumping?
Keep water away from it. Steam off a pan is the usual culprit, so do not hold the open jar over cooking food, and never dip a spoon that has been in something wet. If it has set into a cake, it is still usable - break it up - but that is moisture, and it will not improve from there.
Is the large pack worth it?
Only if you get through it. A big pack standing open for a year is not a saving, because ground spice fades whether or not you use it. Be honest about how much your household actually cooks with in a month, and if you do size up, split it into a small working jar and a sealed reserve rather than opening the whole thing at once.
How should I store it?
In a sealed airtight jar, somewhere cool, dark and dry - a cupboard away from the hob, not the shelf above it. Heat, light and steam are what flatten dry spices. Decant from the bag it arrives in rather than leaving it rolled shut, use a dry spoon every time, and keep the jar closed while you cook rather than open beside a steaming pan.
How long will it keep?

Past that, the question is aroma rather than safety: dry spices do not spoil so much as fade. Open the jar and smell it. If it smells of very little, it will taste of very little, and no amount of extra spooning brings it back.
