Is maida the same as ordinary plain flour?
Broadly the same kind of flour - refined wheat with the bran and germ removed - but not necessarily an identical product. Milling grade and gluten strength vary between markets and mills, and maida is generally finer than a standard supermarket plain flour, which changes how a dough handles. A recipe written for one will usually work with the other, with the water adjusted by feel.
What is it used for?
The doughs and batters that want softness and stretch rather than the character of wholemeal - naan, bhatura, samosa pastry, luchi, and the Indian bakery and sweet-shop repertoire. It is also what most cake and biscuit recipes written in India assume.
Can I use it in place of atta?
For some things, but not for everyday flatbread, and the result will be noticeably different. The two take up water differently and behave differently as a dough, so a roti made from maida is not a roti made from atta. If you are substituting, do it in a recipe that was flexible to begin with rather than one built around the flour.
How should I store it?
Sealed airtight, cool, dark and dry, with a dry scoop. Refined flour keeps better than wholemeal because the germ and its oil have been removed, but it still picks up moisture and cupboard smells, and weevils arrive with the goods - so a couple of days in the freezer when the bag arrives, then a sealed container.
How long will it keep?
