Can I swap this one-for-one with my usual salt?
Not by volume. Salts differ in crystal size and density, so a teaspoon of a fine salt holds considerably more than a teaspoon of a coarse one, and swapping by the spoon is how a dish ends up over-salted. If you are working from a recipe written for a different salt, weigh it, or add less than it says and taste before adding more.
Why does it taste different from table salt?
Source and processing. Salt is not one single thing: what is present alongside the sodium chloride differs from one source to another, and some salts are processed, smoked or otherwise treated in ways that give them a distinctly different flavour and aroma from plain refined salt. That difference is why a recipe often calls for a specific one, and why substituting changes the result.
It has set hard in the pack. Is it still good?
Yes, that is moisture rather than spoilage - salt draws water out of humid air, and Auckland gives it plenty to work with. Break it up and use it. To stop it happening, decant into a sealed airtight container, keep it away from the steam of the hob and the dishwasher, and use a dry spoon.
Is it iodised?
Read the pack. Whether a salt is iodised is the manufacturer's statement and it is printed on the label, and it differs between products - some Indian-market salts are iodised and some are not. We do not restate it here because it is not ours to state.
How should I store it?
In a sealed airtight jar, somewhere cool, dark and dry - a cupboard away from the hob, not the shelf above it. Heat, light and steam are what flatten dry spices. Decant from the bag it arrives in rather than leaving it rolled shut, use a dry spoon every time, and keep the jar closed while you cook rather than open beside a steaming pan.
