What is kewra water?
A distillate of screwpine (pandanus) flowers, used as an aromatic flavouring. It is clear and thin, and its whole purpose is the smell it carries.
How is it different from rose water?
Both are floral distillates and both are used the same way, but they come from different flowers and smell nothing alike. Rose water is soft and unmistakably rose. Kewra is sharper and heavier, with a resinous note behind the floral. They are not interchangeable if the aroma is the point.
Is kewra water the same as kewra essence?
No, and the difference matters. A distilled water is dilute. An essence is far more concentrated and in many cases built on a flavour compound rather than a distillation. The label states which one a bottle is, and that is worth checking before you open it.
