What is rusk?
Twice-baked bread. A loaf is baked, sliced, and returned to the oven until it is completely dry, which gives a hard, porous slice with a long shelf life.
What does 'suji' mean here?
Semolina, which is in the dough. It gives the slice a coarser, slightly sandy texture compared with one made from flour alone, and it holds its shape well when dunked.
Is it the same as cake rusk?
No. Cake rusk is made from a cake batter rather than bread dough, so it is sweeter, richer and more crumbly. Bread rusk of this kind is drier and much less sweet. The two are sold side by side and are easy to confuse by name.
Why is it so hard?
Because all the water has been baked out of it, which is the point -- that is what makes it keep, and what lets it absorb tea without falling apart immediately. It is not stale.
Does it contain dairy, egg or wheat?
It is a wheat product. Milk solids and egg appear in some recipes and not others. The ingredient and allergen statement printed on the pack by the manufacturer is the thing to read.
Some pieces arrived broken. Is that normal?
To a degree, yes. These are thin and brittle by nature and they travel a long way by sea and then by courier, so a proportion of breakage in the bottom of the pack is usual rather than a fault. A pack that is largely crumbs, crushed flat, or has a split seal is a different matter and the store will sort it out.
How do I stop a large pack going soft?
Keep it sealed and dry. Rusk is dried food, so it takes up humidity from the air and goes leathery once it does -- and a 600 gram pack is open for a while. Move what you are not using into an airtight container, keep it out of the fridge, and keep it away from the stovetop and kettle.
