Frequently Asked Questions
How does a whole pulse differ from a split dal?
A whole pulse keeps its seed coat and its shape; a split one has been broken in two with the halves exposed. They are sold as separate products and belong to different dishes - whole pulses hold together and stay distinct, which is what a salad, a chaat or a chole is built on, while splits are used where the pulse is meant to soften into the dish. A recipe will say which it wants.
What does a size like 9mm on the pack mean?
It is a grading, the approximate diameter of the pulse. Larger grades cost more and are prized for looking generous on the plate; smaller grades are the same pulse at a smaller size. It is a size specification rather than a quality claim, and the grade is on the pack.
Why does the colour or size vary between packs?
Agriculture. Harvest, growing season, variety and warehouse time all shift both, so a bag that looks a little different from your last one is normal. Within a single bag some variation in size is also expected - a grading is a nominal figure, not a guarantee that every piece is identical.
There are a few stones or shrivelled pieces in it. Is that normal?
A small amount turns up in dry pulses from time to time, which is why the traditional habit is to tip a pack out and look it over first. A pack that is visibly dirty, smells musty or has live insects in it is a different matter and should go back to the store.
Does it matter how old the pack is?
It does, and it is worth going by the best-before date on the pack rather than assuming dry means indefinite. Pulses harden as they age and older stock behaves differently from fresh, which is the usual explanation when a bag does not turn out the way the last one did. Buy a size the household gets through rather than a bigger bag that sits for two years.
How should I store a large pack once it is open?
Decant it into sealed airtight containers rather than leaving it in the bag it arrived in. That bag is made to survive a pallet and a courier, not months in a kitchen. Keep the containers cool, dry and out of direct light, and use a dry scoop.
How do I keep pantry moths out of it?
Sealed containers, and a couple of days in the freezer when a pack arrives. Pantry moths usually come in with the goods rather than flying into your kitchen, so treating a pack on arrival catches the problem before it spreads along the shelf.
Is the large pack worth it?
Only if you get through it. A big pack standing open for a year is not a saving, because ground spice fades whether or not you use it. Be honest about how much your household actually cooks with in a month, and if you do size up, split it into a small working jar and a sealed reserve rather than opening the whole thing at once.
What is on the pack?
The ingredient list, any allergen statement, the country of origin and the best-before date, all of which are the manufacturer's to state and are printed on the packaging rather than reproduced here. The product page carries the weight, the barcode and the date as the store entered them.
Can I order this with items from other stores?
Yes. DoorToShop is a multi-merchant marketplace, so this can go in the same cart as items from other local stores and you check out once.
How much is delivery, and is there a minimum order?
Delivery is calculated at checkout, where the exact amount is confirmed. Free delivery applies above the threshold shown there, in the Auckland region only. There is no minimum order value, and you can combine items from other local stores in the same cart.
