Why is there so much oil on top?
It is doing a job. The oil seals the pickle off from air and keeps the pieces submerged, which is a large part of why an unopened jar keeps as long as it does. Do not pour it off. If the level drops below the pickle as you use it, push the pieces back down so they stay covered.
There is mould on top. What went wrong?
Water got in, almost always on a spoon. A pickle keeps because salt, acid and a layer of oil hold moisture out, and one damp spoon undoes that. Use a clean dry spoon every time, never eat straight from the jar, and keep the oil covering the surface. Once mould has appeared the jar goes in the bin rather than being scraped - what you can see on top is not the extent of it.
Does it need to go in the fridge once opened?
