What is mango pulp used for?
Aamras first of all, where it is served as it comes or loosened with a little milk and eaten with puri. Beyond that it is the base for mango lassi, kulfi, ice cream, mousse, cheesecake and mango shrikhand, and it goes into batters and cake mixes. It is a purée rather than a juice, so anything you want to drink needs thinning.
Is it sweetened?
That depends on the product, and it is on the ingredient list. Pulps are sold both sweetened and unsweetened, and the difference changes how much sugar a recipe needs - a dessert built around an unsweetened pulp will taste flat if you follow a recipe written for a sweetened one, and the other way round it will be cloying. Read the tin before you measure anything.
Does the mango variety on the tin matter?
Yes, more than most people expect. Alphonso, Kesar, Totapuri and the rest differ in colour, acidity and how perfumed they are, and a pulp made from one does not taste like a pulp made from another.
