What makes these different from the cookies in a supermarket?
Texture, mostly. These are short and crumbly rather than chewy -- they break apart rather than bending. That comes from the proportion of fat in the dough and puts them closer to a shortbread or a nankhatai than to a chocolate-chip cookie.
How do the varieties differ?
They are separate recipes. The ajwain version carries carom seed and leans savoury, sharp and slightly bitter. The kaju pista version is sweet with cashew and pistachio through it. The atta version is made with atta, the wheat flour used for roti, which gives a coarser and nuttier crumb. Picking between them is a choice of three different biscuits.
What is ajwain?
Carom seed. It looks like a small caraway seed and tastes sharp and slightly bitter, with something of thyme about it. In a cookie it pulls the whole thing towards savoury, which surprises people expecting a sweet biscuit.
Do they contain nuts, dairy or egg?
The kaju pista version contains cashew and pistachio by definition, and cookies of this kind commonly contain milk solids and may contain egg. What does 'atta' mean on the pack?
